Finally.........A new update!

My favorite chef is Giada DeLaurentiis.For a Sunday night cupcake these are a delicious, simple cupcake by Giada.

Mascarpone Mini Cupcakes with Strawberries


8 ounces room temperature mascarpone cheese, room temperature
2 egg whites
1 cup water
2 1/2 cups icing sugar
1 box white cake mix
1/4 cup vegetable oil
1/3 cup frozen strawberries


Preheat oven to 350F
Line 48 mini muffin cups with mini cupcake liners. Put mascarpone, egg whites and oil in a bowl, combine until creamy. Add cake mix and water and blend until smooth. Fill cupcake liners with batter just below the rim. Bake for 19 minutes. To make the glaze, purée the strawberries in a blender. Add that to the icing sugar in a medium bowl. Whisk the glaze and add teaspoons of water at a time to loosen it up if nessesary. Let the cupcakes cool for 10 minutes. Then dip them in the glaze and let the glaze harden for 5 minutes.

Basil&Shrimp Fusilli
1 1/2 Cups of Thawed&Cooked Shrimp
1/2 of a Cup of Fresh Chopped Basil
1/2 of a Cup of Halved Cherry Tomatoes
1/4 of a Cup Crumbled Feta Cheese
1 Pound of Fusilli Pasta
Salt
Pepper
1 Tablespoon Olive or Grapeseed Oil 
Cook the Fusilli as directed on package, pan fry the Shrimp for 2-3 minutes add the Cherry Tomatoes fry for another 1 minute add half of the basil, save the other half for the garnish add the Fusilli when cooked then toss with the ingredients that are still left.

Red Velvet Rocks!

Red Velvet Cupcakes with Cream Cheese Icing
1 Box of White Cake Mix
Red Food Coloring
3 Tablespoons of Cocoa Powder
1 Teaspoon of Cinnamon
Pre-Made Cream Cheese Icing
Make the White Cake Batter as directed on box,
add the Cocoa Powder and Cinnamon mix by hand
with a whisk,add Food Coloring and mix again by hand with a whisk,and put in muffin tins lined with Cupcake Liners and bake as the White Cake Mix Box says. When they are ready take them out of the oven and let cool. Put the icing on with a Star-Tipped Pastry Bag or a Knife
